Is Brown Sugar Vegan? Bone Char, Molasses and What to Buy
Brown sugar is plant-based, but in the US it's often white cane sugar (sometimes bone-char filtered) mixed with molasses. Here's how to find brown sugar that's clearly vegan.

Brown sugar contains no animal ingredients, but some US brown sugar is made from cane sugar that was filtered through bone char. Most commercial brown sugar is refined white sugar with molasses added back, so it inherits whatever processing the white sugar went through. Organic, beet, and unrefined brown sugars avoid the issue.
How brown sugar is made
There are two kinds:
- Coated or “refined” brown sugar: white sugar sprayed with cane molasses. Light brown has less molasses, dark brown more.
- Unrefined or minimally refined brown sugar: muscovado, demerara, turbinado, panela/jaggery. Molasses is retained from the start and the sugar never becomes white, so bone-char decolourising isn't used.
Where bone char comes in
Bone char is charred cattle bone used by some US cane refineries to decolourise sugar. It doesn't end up in the sugar, but it's an animal product used in processing. Beet sugar never uses bone char. Outside the US, bone-char filtration is uncommon; most UK and EU refineries use other methods. Read our full is sugar vegan guide for the details.
| Option | Bone char risk |
|---|---|
| Certified organic brown sugar (US) | None. Bone char isn't permitted in USDA organic |
| Brown sugar from beet sugar | None |
| Muscovado, demerara, turbinado, panela | None (not decolourised) |
| Vegan-certified brown sugar | None |
| Generic US cane brown sugar | Possible; ask the brand |
| UK/EU supermarket brown sugar | Very low |
Swapping in recipes
Make your own: mix 1 cup white sugar (beet or organic) with 1 tablespoon molasses for light brown, or 2 tablespoons for dark brown. Coconut sugar works too, with a slightly less moist result.
How strict to be
Many vegans buy organic or beet sugar at home but don't question the sugar in restaurant food or packaged products, where the source is almost impossible to verify. Pick a rule you can keep consistently. See vegan pantry essentials for more baking staples.
