Is Ramen Vegan? Instant Noodles, Broth and Seasoning Packets
Ramen noodles can be vegan, but restaurant broths are usually pork, chicken or fish, and many instant ramen seasoning packets contain meat or dairy. Here's how to check.

Most ramen isn't vegan, but it can be. Restaurant ramen broth is traditionally made from pork bones (tonkotsu), chicken, or fish dashi, and is topped with egg and pork. Instant ramen noodles are often vegan on their own, but the seasoning packet frequently contains beef, chicken, fish or milk.
The parts of a bowl
| Component | Usually vegan? | Watch for |
|---|---|---|
| Fresh ramen noodles | Usually | Some fresh noodles contain egg |
| Instant noodle block | Usually | Some contain egg powder, or are fried in lard (rare) |
| Broth / tare | Rarely | Pork, chicken, bonito, niboshi (dried sardine) |
| Seasoning packet | Often no | Meat extracts, fish powder, milk powder, lactose |
| Toppings | Varies | Chashu pork, ajitama egg, fish cake (narutomaki) |
Reading an instant ramen pack
Check the seasoning ingredients, not just the noodles. Common animal ingredients:
- Beef, chicken or pork powder, fat or extract
- Bonito, anchovy, shrimp or “seafood” extract
- Lactose, milk powder, whey (used as a carrier in many flavours)
- Disodium inosinate (E631), which is sometimes from meat or fish (see E631)
Even “vegetable” and “soy sauce” flavours can contain chicken or fish extract. Several brands now make certified vegan instant ramen, and some Korean ramyun has vegan-labelled versions. In Japan and Korea, look for a vegan or “plant-based” mark rather than relying on the flavour name.
At ramen restaurants
Ask for a vegan ramen specifically, not a vegetable or “veggie” ramen, which may still use a chicken or fish base. Vegan ramen broths are usually built on kombu, shiitake, miso, soy milk or sesame. Confirm the noodles are egg-free and the tare (the concentrated seasoning) has no fish.
Make a quick vegan bowl
Use vegan instant noodles or plain dried ramen, discard any non-vegan seasoning, and make a broth from vegetable stock, white miso, soy sauce, a little sesame oil and garlic. Top with tofu, spring onion, corn and nori. See is soy sauce vegan and our travel tips for eating out in Japan.
